Having IBS doesn't have to mean bland, taste-free, fun-free, finger-licking free food...not on our watch anyway.
Chicken nuggets aren't just for the kids - they are a tasty, quick snack that can be enjoyed by all - high in protein, low in fat and now - IBS friendly!
These are delicious as a snack - maybe dipped into some lactose-free greek yogurt, or served in a soft wholemeal wrap with a few lettuce leaves. Low FODMAP, fast food - just 10 minutes in the airfryer fo crispy, succulent nugs you might want to hide from the kids...
Ingredients:
2 x chicken breasts cut into chunks or goujons
1 x egg
2 x tbsp gluten-free breadcrumbs
2 x tbsp gluten-free flour
pinch of salt
pinch of pepper
1 x tsp of paprika
Method:
- Cut the chicken breasts into chunks or strips (goujons)
- Mix the flour, salt, pepper and paprika together in a shallow dish
- Beat the egg in a bowl
- Add the breadcrumbs to a separate shallow dish
- Take your chicken pieces and first dip them in the egg, then into the flour mixture, back into the egg and finally into the breadcrumbs - doing this in batches makes it easier
- Preheath the airfryer to 200 degrees celsius and place the nuggets in one even layer
- Set the airfryer for 10 minutes, shaking the nuggets half way through
- Serve in a paper towel lined bowl to keep them cripsy
And there you have it! With the addition of gluten-free flour and GF breadcrumbs and using IBS-friendly seasonings like paprika, salt and pepper, these nugs will be your new lunchtime fave!
