IBS-Friendly LOW FODMAP Garlic-Infused Oil
Garlic is used in so many foods, all over the world, due to its fragrant and strong umami flavour. But if you suffer from IBS then this tasty little herb is a NO NO. They contain fructans, an oligosaccharide, which can be difficult for your intestines to break down. This may cause painful gas and cramping and even cooked, can be a trigger for many people with IBS. But fear not, we have come up with a simple hack so you too can enjoy this sweet, buttery and pungent flavour in many of your recipes...

HACK INCOMING

But here’s the good news: fructans aren’t oil-soluble. That means you can infuse oil with garlic, remove the actual garlic bits, and still get all that amazing flavour, without the IBS triggers. Recipe:
  • 250 ml Extra Virgin Olive Oil
  • 2-3 Garlic Cloves
Method:
  • Peel and crush the garlic cloves
  • Add your oil to a saucepan
  • Add the crushed garlic cloves
  • Set on a medium heat until the cloves start to fry/bubble
  • Take of the heat and leave to cool
  • Drain the oil into a glass jar, catching all the pieces of garlic with a sieve
  • Screw lid on tight and use within 3 days.
